THE POLAR BEAR DRINK

3 oz vodka
1/2 - 1 oz Blue Curacao liqueur
7-Up® soda
Blend with ice in a highball glass.

THE POLAR BEAR COOLER

2 oz dark rum
1 oz Punt e Mes red vermouth
1 oz lemon juice
1/2 oz orange juice
3 1/2 oz cold 7-Up® soda

Pour into a collins glass filled with broken ice and add a spiral of lemon. Garnish with an orange wedge and cherry. Serve with straws.

The Alaskan Polar Bear

1 oz amaretto almond liqueur
1 oz Frangelico® hazelnut liqueur
1 oz cocoa cream
1 oz chocolate syrup
1 scoop ice cream
1 1/2 oz whipped cream

Blend ingredients until of milkshake consistency. Serve in a highball glass and garnish with whipped cream.

POLAR BEAR CORNBREAD SALAD

2 pans cooked cornbread
2 1/2 - 3 c. chopped celery
2 bunches green onions, chopped, including tops
3/4 c. chopped bell pepper
1 sm. jar diced pimientos, drained
3 or 4 boiled eggs, chopped
1/2 lb. bacon, fried crisp & crumbled
1 1/2 c. shredded cheese, colby or cheddar
1 c. diced fresh tomatoes
Mayonnaise or salad dressing

Cool cornbread and crumble. Add rest of ingredients and mix with mayonnaise or salad dressing. Takes about 1 quart.

THE POLAR BEAR'S FAMOUS CHARCOAL MARINATED DUCK BREASTS

8 whole duck breasts, split, boned, and skinned
12 oz. bottle Paul Newman's Italian salad dressing
3 tbsp. Worcestershire sauce
Juice of 3 lemons
3/4 tsp. garlic powder
Pepper to taste
16 slices bacon

Soak duck breasts in salt water for at least 3 hours. Blot with paper towels, place in shallow pan. Combine next 5 ingredients and pour mixture over duck breasts. Marinate in refrigerator at least 3 hours, preferably overnight. Remove duck breasts from marinade and wrap each in a bacon slice; secure bacon with toothpicks. Grill over slow coals 7 minutes on each side or until bacon is done. If chicken is used, omit bacon. What's Cooking?

Polar Bear Chili

1. Brown one pound of buffalo and two brats. Season with salt and pepper.
2. Add one can of tomato paste and 2 cans of tomatoes
3. Chop up some garlic, onions, and orange bell peppers real fine
4. Stuff a mesh cook bag full of chopped celery, chili peppers and green bell peppers. (This will simmer with the chili and be taken out later so not to make vegetable soup).
5. Throw in a jalapeno pepper and a can of beer, let simmer for an hour, and get to eatin.

Chili is always best when served with sharpe cheddar cheese!

Breast and Filet meat off of the bone (try to keep the two breasts connected) Quarter and take seeds out of your favorite pepper (I prefer cerrano) and stuff with either goat or mozzarella cheese Wrap breasts around the cheese stuffed pepper Get a package of regular or pepper bacon and cut in half Use half slice of bacon per dove and wrap, securing with two toothpicks to make an X Marinate the concoction in two parts Italian, one part balsamic vinaigrette for 6 to 12 hours Make sure you lay the dove out on paper towels before grilling to prevent a grease fire Grill until the bacon is cooked and enjoy!
